One Zillion Brownie Points
Katharine Hepburn's Brownies a la Rob
(White Chocolate Brownie Heaven)
Adapted from Laurie Colwin
Are you the sort of person who doesn't really like chocolate but is really turned on by the idea of: white chocolate macadamia nut ice cream, white chocolate chunk cookies, or those few white chocolate selections at your local See's Candies stores? Also do you cure your infrequent bouts of depression with spoonfuls of Eagle Sweetened Condensed Milk (refrigerated-thick, and straight out of the can)? Is this your idea of an aphrodisiac?
If so this brownie is for you. (If you're a dark chocolate fan, move it right along, nothing to see here, scram). This will make you swoon, faint, and go straight to your right coronary artery in the bargain as you smile in delight, eyelids fluttering, etc.
I must note that this is a recipe adapated from a cookbook by Laurie Colwin (I forget which one), who in turn adapted this unusual recipe from Katharine Hepburn-- and what an unusual mix this one is, with only 1/4 c flour, and scads of *melted* butter in the saucepan!
Ingredients:
1/2 cup butter (1 stick)
3/4 cup sugar
2 eggs
1/2 tsp vanilla
1/4 cup flour
1/2 tsp salt
1/2 cup white chocolate chips or chopped pieces
2 oz white chocolate
1/2 cup chopped macadamia nuts (optional, also try walnut too)
1) Preheat oven to 325 F. Melt together butter & 2 oz white chocolate on medium. White chocolate melts more slowly than you may be used to, so don't worry and expect the butter to brown. This is *fine*. This is *desirable*. Ignore your double boiler and be sloppy; these are only brownies. Take saucepan off heat.
2) Stir in sugar, eggs, vanilla. Beat well.
3) Stir in flour, salt, white chocolate chips, nuts (optional).
4) Bake in a buttered & floured 8" square pan at 325 for 40 min.
5) Cool completely, then cut & transfer to plate. These brownies are extremely rich, so square should be cut no larger than 1 1/2". These are heaven, think about it: cocoa oils, browned butter, rich macadamia nuts. Thank Kitty for this one. And one more thing-- don't make them without supervision since you'll eat'm all!
