Tuiles: French Almond Cookies
Ideal for occassions when a lighter, classy dessert is called for but you only have the spare effort for cookies... but chocolate chip nor oatmeal will do. Just make these classy, thin, almond cookies which are named after roof tiles.
Ingredients:
6 tbsp butter
1/2 cup sugar
2 egg whites
1/3 cup sifted flour
Pinch of salt
1 cup sliced almonds
Cream butter & blend with sugar. Stir in egg whites, flour, salt, nuts. Butter a heavy cookie sheet then drop batter by teaspoonfuls (cookies will spread about an inch in all directions). Bake at 400 for 10 minutes until yellow in center and golden brown around edges. Watch carefully around 9 minutes, and you can judge by the caramelized smell. They are good just before burning (in fact the golden brown color may even look burnt, but it's fine). Remove cookies with a spatula (no other way!) and press the cookies onto a rolling pin immediately. You may press successive cookies on top of the previous cookies on the rolling pin too. Cool for a few minutes unitl shape holds. You can experiment with cookie size as well, but this will make 1 1/2 dozen.
