Butterballs


Ingredients:

2 cups flour

1 cup butter (2 sticks)

1 tsp vanilla extract

a few cups of powdered sugar

up to a 1 3/4 cup of nuts, walnuts or macadamia, optional

Preheat oven to 450. Cream the butter. If you wish, you can try to microwave the sticks of butter for about 15 seconds until they are soft, but do not melt! Add vanilla and mix well. For extra sweetness, you may add several tablespoons of regular sugar at this point, but I don't add more than 1 tbsp if at all. Some people also prefer salt-free butter for this recipe. Finally add flour and nuts and mix.

If you are adding nuts, walnuts are great. I've made it with macadamia nuts, and those are my favorites, but they need to be broken up, and it is very tedious. However the mac-nut powder which inevitably results should also be mixed in and the taste is great! Erin W. agrees.

Roll into spherical balls about 1" in diameter. Too large and they will fall apart after cooking. Cook in oven at 450 for 15 min. The tops will brown slightly and the bottoms may also be more browned, this is ok. Remove from oven and roll balls one by one in a bowl of powdered sugar until they are well covered. The sugar should melt around the cookie from the heat. Let cool a few minutes and serve! Recipe is an old one from mom, who always made it with walnuts. She also has a twist with lemon peel, which I will list soon.
